Cut the pepper into quarters and remove seeds and core. Cut the chillies in half and carefully remove seeds and core. Peel the garlic and cut each core in half. Boil the potato in its skin

Blanch the pepper, remove the skin and cut into small pieces. Grind in a mortar with the prepared chilies, garlic, salt and saffron. Peel the boiled potato, add to the mortar and work in carefully using the pestle.

Add the egg yolk and stir in. Transfer the paste to a bigger mixibg bowl. Add the oil a few drops at a time, gradually increasing to a thin stream, stirring thoroughly all the time. Continue stirring until the sauce has the consistency of mayonnaise.
